Berliner or Berliner Pfannkuchen is a recipe of German origin. 

They are similar to doughnuts but without a hole. 

They are made from fermented dough is fried and then filled with custard, jam or marmalade and sprinkled with powdered sugar. 

Of course, this is rich in calories. But they are so yummy!

  • 2.1 kg flour
  • 40 g butter
  • 40 g sugar
  • 1 egg
  • 25 g fresh yeast
  • 25 cl water
  • 5 g salt


  • 5 egg yolks
  • 60 cl milk
  • 50 g cornstarch cornflour
  • 100 g granulated sugar
  • 1 vanilla pod
  • icing sugar



  1. put the flour in a large bowl and make a well in the middle
  2. dissolve the yeast in a little warm water and pour into the well in the dough
  3. add the butter, the egg, the rest of the water and the sugar
  4. sprinkle the salt at the edge of the flower
  5. knead the dough until the mixture is homogeneous
  6. cover the bowl with plastic film and place 15 min. in a warm place for the dough to prove
  7. divide the dough into two equal parts, roll each portion into a sausage shape and cut out each sausage into 8 equal pieces
  8. cover with a dry towel and let rise for 1 hour, you now have balls on the right size
  9. heat the deep fryer to 180 °C

  10. let the balls fry for 8 min while regularly turning them so they are golden brown on all sides
  11. cool the balls


  1. beat the egg yolks with the sugar until the mixture is white
  2. add the sifted cornstarch and mix
  3. cut the vanilla pod lengthwise in half and remove the seeds with a knife
  4. bring the milk with the vanilla pod and seeds to the boil
  5. remove the vanilla pod and let the milk cool down a bit
  6. pour the still hot milk on the mixture of egg yolk, sugar and corn starch and mix
  7. put it on the fire and mix until the mixture thickens
  8. sprinkle with powdered sugar and allow to cool


  1. slice the balls in half
  2. fill them with custard
  3. close them and sprinkle with icing sugar
