This carrot velouté is a true delight, yet spiced with a dash of cayenne pepper.

Ingredients

  • 500 g carrots
  • 1 onion
  • 100 ml cream
  • 2 cubes chicken stock
  • 1 pinch cayenne pepper
  • 1 tbsp olive oil
  • pepper & salt

Instructions

Preparation:

  1. peel and grate the carrots
  2. peel and dice the onion

Cooking:

  1. heat the olive oil and let the onion lightly in this thread

  2. add the grated carrots and cook for 5 minutes

  3. add 1 liter of water

  4. add the chicken stock cubes

  5. cook for 20 minutes

  6. blend the soup

  7. add the cream

  8. season with salt and pepper and a pinch of cayenne pepper
