Chicken Basquaise is the sun on your plate with red peppers, tomatoes, onion and white wine.
Easy to prepare but it takes a minimum 1 hour of cooking time.
- 1 chicken
- 2 red bell peppers
- 2 green bell peppers
- 4 tomatoes
- 6 onions
- 100 ml dry white wine
- salt & pepper
- 1 bouquet garni
- 2 tbsp olive oil
cut the chicken into pieces
mince the onions
peel and seed the tomatoes
brown the chicken pieces in olive oil in a casserole dish
add salt, pepper, white wine and bouquet garni
toast whole peppers. When the skin rises, wrap them in a sheet of wet paper. Remove skin and cut into strips.
in a frying pan, melt the onions in the olive oil
add the pepper strips and the tomatoes
add salt & pepper
cook for 15-20 min. so that the vegetables are melted and the sauce is creamy
add the chicken and cook for another 20 min.
