Chicken Basquaise is the sun on your plate with red peppers, tomatoes, onion and white wine. 

Easy to prepare but it takes a minimum 1 hour of cooking time.

  • 1 chicken
  • 2 red bell peppers
  • 2 green bell peppers
  • 4 tomatoes
  • 6 onions
  • 100 ml dry white wine
  • salt & pepper
  • 1 bouquet garni
  • 2 tbsp olive oil



  1. cut the chicken into pieces
  2. mince the onions
  3. peel and seed the tomatoes


  1. brown the chicken pieces in olive oil in a casserole dish
  2. add salt, pepper, white wine and bouquet garni
  3. toast whole peppers. When the skin rises, wrap them in a sheet of wet paper. Remove skin and cut into strips.
  4. in a frying pan, melt the onions in the olive oil
  5. add the pepper strips and the tomatoes
  6. add salt & pepper
  7. cook for 15-20 min. so that the vegetables are melted and the sauce is creamy
  8. add the chicken and cook for another 20 min.
  9. adjust the seasoning
