  • 2 kg ducks
  • 1 tin green peppercorns canned or frozen
  • 2 shallots chopped
  • 60 g butter
  • 4 tbsp Cognac
  • 1 glass dry white wine
  • 1 tbsp cornstarch
  • 100 g cream
  • salt


  1. grill the duck for 30 min. in the oven at 220 °C, without fat
  2. turn the duck 2-3 times so that all sides get color
  3. cut the duck into pieces and set the gravy aside
  4. remove the skin of the duck breast and cut the duck breast in strips
  5. the meat should be pink and bloody, keep it warm
  6. cut the carcass into small pieces, remove as much fat as possible
  7. heat a tablespoon of butter with shallots and the bits of carcass
  8. once the butter is brown, add white wine and Cognac Post
  9. cover and let simmer for 20-25 minutes at high heat
  10. pour the contents of the pan through a sieve, collect the cooking liquid
  11. let the cooking liquid cool a few minutes so that the fat rises to the surface and you can remove it
  12. crush the green peppercorns coarsely, add them to the sauce and add 4-5 tablespoons of cream and cornstarch dissolved in a little water
  13. let it simmer 10-15 minutes
  14. season with salt
  15. clean the casserole and put the reserved duck strips in with the reserved sauce
  16. pour the cooking sauce over it, cover and keep warm
  17. let the duck legs bake further in the oven under the grill, the skin should be crispy
