Escargots de Bourgogne

Escargots de Bourgogne are a French recipe for land snails. They are yummy even if they might not appeal to everyone. 

They are usually prepared in their shell, stuffed with a herb butter but I prepare them in a small enameled cast iron pan without shells. This way they have to cook only 5 minutes. 

Serve with a baguette to soak up the sauce.

  • 1 can snails
  • 150 g butter
  • 2 cloves garlic minced
  • 1 small shallot minced
  • 1 tbsp parsley chopped
  • salt & pepper


  1. melt the butter in a small pan
  2. add the garlic, shallot and parsley
  3. add the snails
  4. season with salt & pepper
  5. cook for a few minutes
