Focaccia with ham and onion

Focaccia is an Italian bread with various ingredients: garlic, olives, rosemary, ham, onion... 

In this recipe, the dough is prepared in the breadmachine and the focaccia baked in the oven.

Baked in the oven the bread will be flat and round, baked in a breadmachine it will have the shape of an ordinary bread.

  • 250 g flour
  • 4 tbsp olive oil
  • 10 g fresh yeast or 5 g of dry yeast
  • 150 g milk lukewarm
  • 80 g raw ham diced
  • 1 onion chopped
  • 1 clove garlic chopped
  • 1 tsp rosemary
  • 1 tsp oregano
  • salt


Preparation of the dough in the breadmachine:

  1. dissolve the yeast in 2 tbsp of milk, dry yeast may be added directly into the breadmachine

  2. put the ingredients in the bread machine: salt, milk, flour, yeast, olive oil

  3. select the dough program

  4. when the alarm rings to add further ingredients, add the garlic, onion, ham, rosemary and oregano

Preparation of the dough by hand:

  1. dissolve the yeast in 2 tbsp of milk, dry yeast added may directly in the dough

  2. make a well in the middle of the dough

  3. add the yeast

  4. add 2 tbsp of olive oil as well as the rest of the milk and salt

  5. knead the dough

  6. add the remaining ingredients: garlic onion, ham, rosemary and oregano
  7. brush the dough with olive oil and let it prove at room temperature for 1 h

Bake in the oven:

  1. preheat the oven to 200 °C

  2. place the dough on a baking sheet and in a layer of about 2 cm height

  3. make notches at the top

  4. sprinkle with salt and olive oil

  5. bake for 20 minutes

  6. when removing from the oven, sprinkle with oil (to taste)
