Macaroni and cheese

This is the original recipe for the macaroni and cheese gratin, based on a béchamel sauce. 

It's a typical family dish that everyone loves. 

For a faster version, replace the white sauce is by cream.

The dish is also called mac and cheese, macaroni cheese or macaroni pie.

  • 350 g macaroni
  • 400 g grated Gruyère cheese
  • 75 cl milk
  • 6 slices cooked ham
  • 1 tbsp butter
  • 1-2 tbsp flour
  • salt & pepper


  1. Boil the macaroni as recommended on the package and then pour it down

  2. Prepare a roux: let the butter melt and add the flour gradually while  stirring with a whisk until you get a solid dough. Let it bake for 1 minute, until it smells like biscuits.

  3. Add the milk gradually and stir well until you get a smooth white sauce

  4. Add the grated gruyère cheese, bit by bit, and mix well. Keep some cheese for the gratin.

  5. Season with salt and pepper
  6. Eventually add a tsp of cayenne pepper

  7. Cut the ham into squares and add to the sauce

  8. Add the pasta to the sauce and stir

  9. Put the mixture in an oven dish

  10. Sprinkle with grated cheese to from a gratin layer

  11. Bake in the oven at 180 °C (thermostat 6), 25 to 30 min.
