Mafé or chicken in peanut sauce

Chicken in peanut sauce is a dish with a delicious creamy sauce. 

In Senegal it is called mafé or maffé. According to Wikipedia, the dish is from Mali but it is prepared everywhere in Africa.

Serve with rice.

  • 1 chicken cut in pieces, or thighs or drumsticks
  • 200 g peanut butter
  • 2 onions
  • 2 carrots optional
  • 3 tomatoes or 1 can of peeled tomatoes (400
  • 1 tin tomato paste optional
  • 2-3 cloves garlic
  • 1-2 chili peppers
  • 2 tbsp peanut oil
  • 4 cubes beef stock cubes
  • salt & pepper



  1. peel and slice onions
  2. peel the carrots and cut them into slices
  3. peel and slice tomatoes
  4. peel the garlic and crush


  1. heat oil, brown the chicken pieces
  2. add onions, peppers and carrots and cook 5 minutes
  3. add garlic and cook 3 minutes
  4. add the tomatoes and tomato paste
  5. add water to cover the chicken pieces
  6. add Maggi cubes
  7. season with salt & pepper
  8. simmer about 30 minutes
  9. add peanut butter: 2 tablespoons to begin with, check the taste and add if necessary
  10. check the seasoning and add salt & pepper if necessary
