Portobello stuffed with bacon and Brie

This is an improvised recipe for which I had to rummage the fridge. 

This is what's great with stuffed Portobello, you can vary the stuffing by using leftovers: cream cheese with garlic and herbs, vegetables...

  • 2 Portobello
  • 50 g smoked bacon
  • 1 piece Brie
  • 200 ml cream
  • 1 knob butter


  1. clean the mushrooms with a clean cloth without water
  2. scrape the plates with a teaspoon (optional)
  3. cut a few thin slices of Brie
  4. preheat oven to 200 °C
  5. cook the bacon in hazelnut butter
  6. add the Brie and melt
  7. add the cream and heat
  8. place the mushrooms upside down in a baking dish
  9. fill with the stuffing
  10. garnish with a slice of Brie
  11. cook in oven for 20-25 min.
