Rice pie

Rice pie is a traditional Belgian pie eaten on Sunday with the family.

It's a bit long but very easy to make.

Ingredients

Dough:

  • g 20 fresh yeast or 10 g dry yeast
  • 130 ml warm water
  • 500 g flour
  • 2 eggs
  • 1 pinch salt
  • 25 g sugar
  • 200 g butter

Rice pudding:

  • 1 l milk
  • 150 g round rice
  • 1 pod vanilla
  • 100 g sugar
  • 2 egg yolks
  • butter

Instructions

Preparation of the dough:

  1. dissolve the yeast in lukewarm water and mix

  2. add the water with the yeast

  3. mix in a large bowl the flour, eggs, salt, sugar and butter

  4. roll the dough into a ball, wrap it in film and let it rest in the refrigerator

Preparation of the rice pudding:

  1. take a thick bottomed saucepan and moisten the bottom to prevent milk from burning
  2. add the milk and the rice
  3. add the split vanilla pod
  4. cook gently until mixture has thickened and the rice is cooked

  5. add sugar and remove from the burner

  6. add the 2 egg yolks

  7. remove the vanilla bean

  8. let cool

Baking of the pie:

  1. butter the pie dish and sprinkle with flour

  2. remove the dough from the fridge

  3. roll the dough until you get a thin pie crust

  4. place the dough in the pie plate

  5. fill with rice pudding

  6. let it cool completely so that a film forms on the rice pudding

  7. brush with a mixture of egg yolk and milk

  8. bake 20 min in an oven preheated to 180 °C
