Shrimp bisque

Bisque is a creamy and spicy crustacean soup. 

This shrimp recipe is very easy to make and very tasty.

  • 300 g shrimp
  • 3 tomatoes
  • 2 stalks celery
  • 2 cloves garlic finely chopped
  • 20 cl Cognac or Armagnac
  • 1 tbsp olive oil
  • salt & pepper


  1. peel the shrimp and keep the shrimp tails separate from shells and heads
  2. dice the tomatoes, no need to peel
  3. wash the celery and cut into small pieces
  4. peel and finely chop the garlic

  5. fry the shells and heads in a olive oil for 5 minutes
  6. add the garlic
  7. add the Cognac, a small glass of water, water, tomatoes, celery
  8. simmer over low heat for 30 minutes
  9. turn off the heat and pass the soup through a sieve
  10. season with salt and pepper
  11. garnish the soup with some peeled shrimp tails and serve
