Talétalé or banana fritters

This is an Ivorian recipe but banana beignets or fritters are eaten in different African countries, with or without hot pepper sauce, hot or cold. 

They are firmer than European beignets or fritters but they are very tasty and children love them.

  • 1 kg ripe dessert bananas
  • flour (wheat or corn)
  • granulated sugar
  • frying oil
  • 1 pinch salt


  1. Peel the bananas and knead them in a large bowl

  2. Add the flour, a little sugar (according to your taste because the banana is naturally sweet) and a pinch of salt to obtain a firm but not too heavy dough that will not sink when fried.

  3. Heat the oil and test it with 1 beignet: the beignet must float

  4. Fry the beignets until they are golden

  5. Keep a close eye to it as the beignets are fry very quickly

  6. Serve hot or cold, with or without hot pepper sauce
