Whelks in celery and chili broth

Whelks are sea snails. In Brussels, they are eaten as street food, boiled in a celery and chili broth and sold from carts, such as Chez Jef in front of the Bourse.

 Ideally, there should be enough chili to make you cry when you finish drinking the broth. 

It clears the sinuses and is perfect for when you have a cold.

  • 1 kg snail meat
  • 1 celery
  • 1 chili pepper
  • salt



  1. wash the celery and cut into small sections

  2. wash chili and cut in 2 lengthwise


  1. put the snails in a big cooking pot

  2. add water to cover the snails

  3. add the celery and chili

  4. add a liberal amount of salt

  5. cook about 15 min.
