- 200 g self-raising flour
- 100 g butter softened
- 100 g caster sugar
- 7 ml milk
- 1 eggs
- 1 tsp vanilla extract optional
- 1 pinch salt
- 150 g mascarpone or 200 ml whipped cream
- speculoos paste
- jam or marmelade
- white sugar
- vanilla extract
- almond extract
- instant coffee
- caster sugar
- cacao powder
preheat oven to 180 ° C
mix all the ingredients to obtain a smooth paste
cover the baking pan with baking paper
deposit small circles of paste of 2 cm in diameter, with two spoons or a piping bag. Leave enough distance between them because the dough will spread when baking.
bake 8-10 minutes

whip the mascarpone or cream to a smooth cream
add ingredients according to taste
when the cookies have cooled, turn half a cookie and spread the cream on it
