Whoopie pies or whoopies or are the successors of cupcakes (loved it) and pop cakes (blah). 

These are small cakes filled with cream coming from the USA. 

They are delicious and you can vary the biscuit, cream and decoration. You'll love it.

Ingredients

Whoopies:

  • 200 g self-raising flour
  • 100 g butter softened
  • 100 g caster sugar
  • 7 ml milk
  • 1 eggs
  • 1 tsp vanilla extract optional
  • 1 pinch salt

Base filling:

  • 150 g mascarpone or 200 ml whipped cream

Speculoos filling:

  • speculoos paste

Fruit filling:

  • jam or marmelade

Vanilla filling:

  • white sugar
  • vanilla extract

Almond filling:

  • almond extract

Coffee filling:

  • instant coffee

Chocolate filling:

  • caster sugar
  • cacao powder

Instructions

Whoopies:

  1. preheat oven to 180 ° C
  2. mix all the ingredients to obtain a smooth paste
  3. cover the baking pan with baking paper
  4. deposit small circles of paste of 2 cm in diameter, with two spoons or a piping bag. Leave enough distance between them because the dough will spread when baking.
  5. bake 8-10 minutes
  6. let the pies cool on a grid

Base filling:

  1. whip the mascarpone or cream to a smooth cream
  2. add ingredients according to taste

Assembly:

  1. when the cookies have cooled, turn half a cookie and spread the cream on it
  2. cover with a second half biscuit
  3. optionally roll the edges in trim: sugar pearls, small cake decorations, ice cream...
